Soup is an awesome way to get your fiber and lots of nutrients! I am going to call this “Refrigerator Vegetable Soup." The reason why I call it that is because you can virtually put any vegetable in this soup. This is a great way to use vegetables before they go bad. This is an easy recipe to make AIP friendly, vegan, keto, gluten and dairy free. You can adapt it to your dietary preferances.
I like to start with sautéing carrots, celery and onion in olive oil. Add spices. I added Thyme, Sage, Garlic, Parsley, Pepper and Salt.
Next I add 4 - 6 cups broth
Come to a boil then add lots vegetables.
If you add meat cook it and then add it. I choose to use flounder in this soup.
I cover it and simmer it until vegetables are soft.
Add more spices to taste.
- Lots of veggies
- Broth (Chicken, Beef or Vegetable)
- Meat (Anything you prefer)
- Salt (Himalayan or Sea Salt)
