Pickled Beets

I made refrigerator beets for my first time. I love pickled beets but I don’t want the sugar, preservatives or traditional vinegars. This was an easy recipe.

Beets have nutrients like potassium, betaine, magnesium, folate, and Vitamin C and they are a great source of nitrates. Beets can also help reduce blood pressure, help with anemia, improve circulation and cognitive function.

I peeled and cut up the beets. Threw them in foil with salt, pepper, and olive oil. Cook on 375 for an hour.

Boil 1 cup apple cider vinegar, 1 cup water and 2 TB raw honey. This made two jars. In a few weeks they will be ready to eat. I can’t wait!!!
